His cuisine draws on his Peruvian background, incorporating local ingredients to deliver stellar ceviches, tiraditos and other Latin classics. Chef Perez uses modern techniques to deliver stunning presentations and exciting twists on comfort dishes. The menu features an array of tapas-style appetizers and some incredibly well executed, familiar main dishes such as: lomo saltado served with seared organic beef tenderloin, fingerling potatoes and jasmine rice, or a stunning interpretation of "shrimp and grits" with a jumbo prawn, purple polenta, Spanish chorizo and aji amarillo sauce. Open for lunch and dinner, this little gem strips down the pretense but doesn't compromise on quality.
