Pecan-Crusted Red Snapper - Executive Chef David Cuntz, Louisville, KY

This elegant dish is a snap to make, especially if you prepare the sauce a day in advance, refrigerate, and reheat over low heat before serving. The fish pairs well with a simple accompaniment of wild rice, grilled vegetables, and a Woodford Spire - A light and refreshing drink, great for any summer occasion.

WOODFORD SPIRE
1 1/2 ounce Woodford Reserve® Straight Bourbon Whiskey
2 ounce Lemonade
1 ounce Cranberry Juice

THE SNAPPER - 4 SERVINGS
2 cups pecans, finely chopped
1/2 cup packed brown sugar
salt and pepper to taste
4 (8-ounce) red snapper fillets

BOURBON SAUCE AND ASSEMBLY 
1 tablespoon chopped shallots
1 tablespoon chopped garlic
1 tablespoon butter
1 cup Woodford Reserve® Straight Bourbon Whiskey
1/2 cup honey juice and grated zest of 1 lemon
1/2 cup (1 stick) butter, chilled and cut into 1/2-inch cubes
salt and pepper to taste
chopped fresh parsley

For the Woodford Spire, combine ingredients into a tall glass with ice and stir. Garnish with a lemon twist.

For the snapper, preheat the oven to 400 degrees. Mix the pecans, brown sugar, salt, and pepper in a shallow dish. Coat the fillets evenly with the pecan mixture and arrange them in a single layer in a baking dish sprayed with nonstick cooking spray. Bake for 8 to 10 minutes or approximately 10 minutes per inch of thickness.

For the sauce, cook the shallots and garlic in 1 tablespoon butter in a medium saucepan until tender but not brown. Deglaze the pan with the bourbon. Cook over medium-high heat until the liquid is reduced by 1/2, stirring frequently. Stir in the honey, lemon juice, and lemon zest.

Bring to a boil and reduce the heat. Simmer for 2 minutes, stirring frequently. Remove from the heat and whisk in 1/2 cup butter until blended. Season to taste with salt and pepper. Drizzle the sauce over the fillets on serving plates and sprinkle with parsley. Serve with wild rice and grilled vegetables. You may prepare the sauce up to 24 hours in advance and store, covered, in the refrigerator. Reheat over low heat.
