At COMO Metropolitan Miami Beach, Traymore restaurant is a unique collaboration with Michael Schwartz — a James Beard award-winning chef, and cookbook author. The menus are a direct reflection of COMO’s 20-year commitment to healthy yet flavourful cooking. Chef Michael Schwartz also oversees food and beverage served throughout the property, including in-room dining and the pool area. Open for breakfast, lunch and dinner, the dishes are inspired by American cuisine but balanced with fresh Floridian flavours, creating a light, Brasserie-style of cooking. These include staples such as a Belgium Endives salad, robust pasta dishes, Wok-Charred Salmon and a selection of small bites. Using locally sourced produce, the dishes are a reflection of our commitment to sustainability. The menu is also perfectly complemented by craft cocktails from Sling Bar, created by our talented mixologists. Staying true to the original design inspired by Miami’s Art Deco Golden Age, the restaurant incorporates tropical influences from the hotel’s coastal surroundings – an element that is central to both food and design.
