Thanksgiving Prix Fixe at Sérêvène

French techniques and Japanese accents shape a four-course Thanksgiving dinner at Sérêvène, where turkey arrives as a sage roulade with velouté and cranberry-ginger coulis. Chef Pawan Pinisetti presents the holiday prix fixe Thursday, November 26 at Hotel Greystone in Miami Beach.

The menu begins with honeynut squash bisque with nutmeg cream, amaretto crumble and sage brown butter, followed by cranberry kale with sesame vinaigrette, bagel crisp and soy ricotta. The turkey course includes sofrito-braised greens and wild mushroom bread pudding. Pecan pie with a sablé cookie and praline crémeux completes the meal.

Dinner costs $69 per person, before tax and an automatic 20% service charge. Fresh truffles are available upon request, and bottles of wine priced under $250 are offered at 50% off. Guests must be ages 21 and older.
