Christmas Eve Dinner at Essensia features a welcome selection of organic prosecco or a citrus-forward holiday cocktail before moving into courses that balance comfort with elegance. Guests begin with a carrot-ginger velouté made with coconut milk and toasted pine nuts, followed by a choice of starters such as burrata with prosciutto and figs, grilled octopus with Romesco sauce or Essensia’s signature kale Caesar. Entrée options include pan-seared Florida cobia with winter citrus butter, an 8-ounce grass-fed filet mignon with seasonal vegetables or a porcini and butternut squash risotto. Dessert brings a choice of an apple-cranberry crumble tart, caramel pumpkin pie or a coconut mousse–based Christmas Hat.
