Inspired by the Hive: A Honey Infused Dinner Celebration

A three-course dinner at Boulud Sud highlights the first honey harvest from the JW Marriott Marquis Miami’s rooftop beehive. Taking place Thursday, October 22, Inspired by the Hive marks the inaugural year of the hotel’s beekeeping program with Alvéole, pairing locally harvested honey with Mediterranean-inspired dishes and wine pairings.

The menu begins with roasted baby golden beets and citrus served with honey Greek yogurt, followed by pan-seared halibut with saffron fennel, artichoke and a honey-preserved lemon beurre blanc. Dessert features honey panna cotta with goat cheese whipped ganache, figs, honey crumble and a sugar honeycomb.

Members of the Alvéole team will also share the story of the hotel’s hive and its first year. The evening begins with a welcome cocktail before the seated dinner, and each guest receives a jar of Rooftop Reserve Honey harvested from the property’s beehive.
