Led by Culinary Director Abram Bissell, a Florida Keys native whose career includes Michelin-starred kitchens at The Modern, NoMad, and Eleven Madison Park, Pauline brings a thoughtful, ingredient-driven approach to the flavors of the coast.
The Crudo section features Cinco Conchas, conch ceviche, and Key West pink shrimp, while signature dishes such as tuna ceviche, lobster fideos, whole crispy red snapper, johnny cake, and cou-cou reflect the restaurant’s Caribbean and Latin influences through the lens of modern Miami.
Named for Pauline Baker, wife and muse of celebrated cocktail writer Charles H. Baker Jr., the restaurant takes inspiration from their travels through Latin America and the glamour of Deco-era Miami.
