Overview
Plan and manage the kitchen staff in the procurement, production, preparation, and presentation of all food for the hotel in a safe, sanitary work environment which conforms to all standards and regulations and achieves profitable, competitive, quality products.
Essential Duties and Responsibilities
- Direct the day-to-day operations of all areas of the kitchen including outlets, banquets, stewarding, and purchasing.
- Manage Human Resources in the kitchen to attract, retain, and motivate associates; including hiring, training, coaching, and performance reviews.
- Plan and manage the procurement and presentation of all food in a safe, sanitary, and cost-effective manner.
- Monitor and control maintenance and sanitation of the kitchen and equipment to meet/exceed federal, state, and corporate regulations.
- Develop and manage the department budget; analyze and control labor and food costs to meet management objectives.
- Develop and implement menus and production standards to improve revenues and profit margins while maintaining luxury quality.
- Execute and promote the Accident Prevention Program to minimize liabilities.
- Comply with attendance rules and be available to work on a regular basis.
- Perform any other job-related duties as assigned.
Qualifications and Skills
- Two+ years of post-high school education (Culinary education preferred).
- Five+ years of employment in a related management position.
- Hotel experience preferred.
- Advanced knowledge of culinary principles, people management, and complex food/beverage problem solving.
- Knowledge of hotel operations: marketing plans, labor relations, business plans, budget forecasting, and hospitality law.
- Strong leadership skills to motivate staff and ensure goal accomplishment.
- Ability to work effectively under strict time constraints and deadlines.
- Effective verbal and written communication skills with the ability to adapt style to suit different audiences.
