The menu begins with refined starters such as foie gras royale with parmesan foam and house-cured salmon gravlax with sturgeon caviar, followed by seasonal dishes including white asparagus with poached egg and ramps. Main courses include stuffed rabbit loin in morel mushroom cream sauce and lamb saddle with spring onion, with the option to upgrade to Japanese A5 wagyu beef. Dessert concludes the experience with a composed carrot cake featuring cream cheese and goat cheese mousse and pecan cocoa crumble.
As Miami’s only two-Michelin-starred restaurant, L’Atelier de Joël Robuchon reflects the late chef’s signature approach of elevating classic French cuisine through precision and technique.
