Open-fire cooking traditions from around the world take center stage during an evening of bold flavors and curated pairings in Coral Gables.
The Live Fire Wine Dinner takes place Wednesday, March 18 at Fairways inside The Biltmore Hotel Miami in Coral Gables. Chef Sean Bernal presents a multi-course menu inspired by global grilling techniques, with wine selections by sommelier Jorge Lopez featuring full-bodied reds and crisp rosés chosen to complement the smoky, char-driven dishes.
The menu begins in Sonora, Mexico, with char-grilled duck tacos featuring chocolate mole-rubbed duck magret, salsa cascabel and blue corn tortillas. A Mediterranean course follows with Greek grilled octopus accompanied by Santorini capers, Kalamata olives and lemon fingerling potatoes.
The third course travels to Argentina and Texas, pairing a char-grilled parilla mixta of veal sweetbreads, chorizo and morcilla with chimichurri alongside slow-smoked and grilled short rib served with pinto beans, corn and jalapeño chayote slaw. Dessert concludes in the Caribbean with vanilla-grilled pineapple upside-down cake.
