For dinner on Brickell, Ockap Caviar & Cuisine is the neighborhood's caviar-forward fine-dining room, composed in Paris with Ducasse Conseil, where Osetra anchors every plate (ten grams per course, twenty with pastas and mains). The menu is French in technique and global in influence: Caviar Croquetas, Lobster Roll & Caviar, Tagliolini with Dill Cream, Sea Bass with Champagne Sabayon, Fried Chicken & Caviar, and Lobster with Bisque. Two tasting menus are offered — Five-Course at $160 and Seven-Course at $205 — plus tins of the proprietary Ockap Caviar (Baerii, Osetra, Kaluga Hybrid, Beluga Hybrid) served on mother-of-pearl.
Spanish-born chef Carlos Consuegra Graino, an alum of Daniel Boulud and José Andrés, runs the kitchen. Sixty seats in a room of deep bronze and warm linen, with a wine list weighted toward Champagne.
