Coyo Taco & Cafe La Trova Collaboration Kickoff Party

Two Miami hospitality staples join forces for a limited-edition cocktail collaboration celebrating the city’s signature flavors and nightlife culture. COYO Taco and Café La Trova debut a special frozen El Guayabero, blending Cuban cantinero tradition with COYO’s high-energy taqueria style.

The Coyo Taco & Café La Trova Collaboration Kickoff Party takes place Thursday, March 5 fat Coyo Taco in Coral Gables.

Originally created by renowned cantinero Julio Cabrera, the El Guayabero is reimagined for the occasion as a frozen 305 Day edition made with tequila reposado, guava nectar, housemade picante syrup and fresh lime juice. The cocktail will be available at all COYO Taco locations through the end of March.

The Coral Gables kickoff celebration features a guest bartender from Café La Trova, complimentary sips of the frozen El Guayabero and a live DJ set inside the venue’s speakeasy-style space. The collaboration continues throughout the month, with Café La Trova offering limited-edition tacos featuring COYO Taco’s signature salsas and tortillas.

This partnership highlights Cuban cocktail heritage and Miami’s vibrant street-food scene in a monthlong citywide toast.
