Executive Chef Giovanni Genao joined Miccosukee Casino & Resort on June 1, 2026, bringing more than 30 years of culinary leadership across South Florida’s luxury hotels, resorts, casinos, and convention operations. With deep experience in high-volume banquets, resort dining, and large-scale culinary systems, Chef Giovanni blends Latin roots with global influences. His approach focuses on elevating food quality, developing people, and creating memorable guest experiences through discipline, creativity, and respect for every ingredient.
Mac Metzler, Beverage Manager at Miccosukee Casino & Resort, oversees the property’s beverage programming, including La Brisa and Tempt Lounge. Originally from Mississippi and now based in Miami, he brings a practical, guest-focused approach to cocktail development. For the Miami Spice menu, Mac created a coffee-inspired cocktail selection that reflects Miami’s café culture while complementing the bold Latin flavors of La Brisa.
