High above the skyline on the 22nd floor of the AC & Element Hotel in Brickell, Rosa Sky Rooftop blends skyline views with a lively, social atmosphere. Hidden inside The Standard Spa, Miami Beach, Monterrey Bar is sultry, stylish and intentionally understated. Award-winning mixologist Valentino Longo, formerly behind the esteemed Champagne Bar at the Surf Club, channels his love for his native Italy into a playful and modern cocktail menu full of spritzes, negronis, martinis and more.
The vibe is intimate and fun, but make no mistake: Longo brings serious skill and precision. Many of the drinks are made with Milano-Torino (Mi-To), his homemade dolce amaro blend. Don’t skip the red prawns in a kiwi aguachile and the mortadella pizza with ricotta and pistachio pesto.
The Bar
After undergoing a major renovation that’s recaptured the magic of its Art Deco DNA, the historic Shelborne recently reopened as The Shelborne by Proper in South Beach. Its centerpiece is The Bar, a gorgeous open-concept room just beyond the reception area that feels like a space for the world’s most chic and creative minds to gather and unwind.
Order the martini service – one of the smoothest we’ve had – with Condesa gin, avocado oil-washed Grey Goose Vodka, dry vermouth cocchi americano, fennel and tangerine EVOO. For snacks, we’re fans of the locally inspired conch fritters and red prawn ceviche.
