Meander down a nondescript back hallway at Reunion Ktchn Bar in Aventura and you’ll find yourself at Blind Tiger, North Miami-Dade’s most exclusive omakase counter. This 25-seat gem hosts two nightly seatings, when chefs grind up real wasabi root before plating over a dozen courses of chef-selected Japanese delicacies. The choices vary depending on what’s fresh and what the chef’s in the mood for, but typical Miami Spice selections can include ora king salmon tataki, rainbow fish tartare, Hamachi crunchy lettuce wrap and a selection of six nigiris. During Miami Spice, the experience is only $80.

The ground floor of the Marriott Stanton South Beach hotel houses one of Miami Beach’s top Japanese restaurants: Azabu. The Den, its not-so-hidden omakase counter, features a communal dining experience where guests gather around and watch Azabu’s chefs work their magic. Fish comes to Miami direct from Tokyo’s Toyosu Market, and the Miami Spice selections include eight pieces of nigiri, one roll, miso soup and mocha ice cream. Travel to Miami’s southwestern suburbs  and you can find some true culinary gems tucked into unassuming strip malls. The meal continues with kampachi crudo and lobster vinaigrette, a summer squash mille feuille, heritage chicken stuffed with black truffle, and strawberry key lime cremeux for dessert. The dinner is priced at $135, served Tuesday-Sunday.

A Bluefin Cutting Ceremony at SORA By Hotel Collection

The bluefin tuna cutting ceremony is one of the great spectacles in the culinary world: Master sushi chefs take this prized catch and turn it into sashimi. As part of Miami Spice on August 29 and September 9, SORA By Hotel Collection  in Wynwood is giving guests the chance to be part of the ceremony. Each ticket includes unlimited bluefin tuna, hand rolls, salmon appetizers and a glass of sparkling wine. The program begins at 7 p.m., with the ceremony starting at 8:30 p.m. Everyone in attendance will get a special Hotel Collection gift bag and a chance to win a $250 SORA gift certificate. Tickets for the ceremony start at $128. You must be 21 or over to attend.
